Here I sit with a tepid cup of chamomile tea, surrounded by Pampered Chef goodies, too many lights on. My husband is travelling for work, my girls are asleep and I’ve been cleaning out cupboards. I do rest but when he’s home begging for me to watch tellie with him on the couch. But he’s gone and I get so much done! So…how about another recipe?
Chicken Soup ~ Okay…doesn’t sound exciting but it is delicious. A little bit of a kick and just the right of ingredients. Once again…if you can think of something else, then please go ahead!
Not Your Ordinary Chicken Soup (Gluten and Dairy Free)
The best chicken is some leftover from a roasted one the night before. Pick as much off the bones as possible.
1 carton organic chicken broth
1 ~ 14oz can refried beans, I use Trader Joe’s Refried Beans with salsa. It has no hydrogenated oil in it.
1 cup salsa, your favorite kind will do.
This is where it gets fun. Add some frozen corn, brown rice, drained black beans, or other veggies of your choice.
Combine all ingredients in your crockpot, which can be left on for what seems like ever, or in a pot. If in a pot on your stove cook until hot through and all frozen ingredients are warm.
Serve with corn chips, sour cream (dairy free if you can find it), avocadoes, chunked tomatoes. One crock pot will serve four adults and two picky children easily.
